Three New Acai Berry Recipes

After watching the Rachel Ray show where she talked about acai berry, I started doing some searching to try and find some recipes for acai berry. I just couldn't seem to find anything that I thought was worthwhile, so instead of giving up I decided to see if I could come up with my own recipes. I have had pretty good luck in the past experimenting with food and coming up with my own versions of things.

First I wanted to make a marinade for chicken that I would then bar-b-que. I have a great citrus (lime, orange and sour orange) and white pepper marinade that I learned when I stayed in Nicaragua for a while. Another variation of that is my own lime juice, soy, and Bragg recipe. So I thought that instead of the citrus, I might be able to use acai to add a different flavor.

To make my marinated barbeque chicken I always start with chicken breasts cut up into strips. This makes my chicken turn out more or less like chicken satay, but without the peanut sauce. I threw the chicken in a Tupperware, added olive oil and acai berry juice, and to balance the acai sweetness, I decided to try some capers in the mix. I finished the marinade by adding sea salt to tenderize the meat. If you do add salt make sure to marinate your meat for a minimum of 6 hours, otherwise the salt will just end up drawing the juices out of your meat and you'll have tough dry chicken. By suppertime my chicken was ready to cook. As it turns out, it was quite tasty - similar to a wine marinade. I don't think I have the recipe quite right yet though, because my citrus chicken is still my favorite. Plus, it seems that a lot of the expensive acai is wasted in the marinade, instead of actually eating it.

So my second recipe that I came up with actually turned out a lot better. It maintains all the health benefits of acai as well, so that is good. Start with a container of plain yogurt. You can use low fat if you want to reduce the calorie and fat levels of this dish. Add one cup of some sort of acai drink - either juice or a pre-mixed smoothie, and mix well. Then take this and put it in a strainer with 2 layers of cheese cloth and set it over a dish to drain. Let this sit in the fridge for 24 hours to allow all the liquid to drain off.

I pealed the acai/yogurt mixture off the cheese cloth and into some Tupperware. I then froze the mixture for 8 hours. It was delicious! It was tangy from the yogurt and had the rich berry taste of acai. The amount of freezing depends on how you like to have your frozen yogurt. I prefer it softer rather than harder and therefore 8 hours worked well for me.

Finally I tried my own version of the classic fruit recipe - the smoothie. For my version I added the following to a blender: 3 ice cubes, 1 frozen banana, 1/2 cup low fat yogurt, and 1/2 cup acai berry juice. Blend this on high until the ice has been blended and the whole thing is smooth. Freezing the banana beforehand ( I cut it in chunks before I freeze it) makes this drink extra thick and creamy. If you want to add some additional healthy ingredients, add some wheat germ or flax meal. Both add some fiber and a nice nutty flavor.

So after all my experimenting with acai berry recipes, I am pretty happy with the ones that I came up with. I'm sure that I'll do some more versions and will probably come up with a few more that I can use to keep me from getting bored of the same acai drink every day. I just wish that Rachel Ray would have another show about acai berry, because I'm sure that she could come up with some pretty delicious acai berry recipes. - 31843

Eating Healthy - How Hard Can It Be?

When our parents were growing up, eating healthy actually wasn't too difficult. Processed foods really hadn't hit the market yet, fast food restaurants were few and far between, and the worst things they could do their healthy was pretty much using too much fat or butter in the cooking. Milk was delivered almost daily, and juices were squeezed fresh. Mom might sneak in some bacon or sausage at breakfast, but compared to some of the junk we expose ourselves to nowadays, that wasn't all that bad.

Meats were fresh, produce was fresh, eggs and milk were fresh. Today, even though we still buy fresh foods, our freezers are much larger but they are full of frozen prepackaged dinners, frozen juice, ice cream, frozen burgers and hot dogs, and all sorts of frozen snack foods for the kids after school.

Decades ago even schools made kids eat healthier. There wasn't much of a choice, actually. They got a hot meal, milk, and maybe dessert. No cokes, no vending machines with chips and cookies, no coffee or frapaccuinos, and no energy drinks loaded with sugar and caffeine. Kids got a balanced meal - in accordance with the food pyramid knowledge of the day.

The trouble with all this is that these foods that cause so much damage to our bodies are just so good! It seems the better they taste the worse they are for our health. Even though we all know that fresh green vegetables are the way to go, many of us can't gag down broccoli without a stick of butter or half pound of melted cheese on top... Killing the entire reason for eating the broccoli to begin with.

Eating healthy means different things to different people. For one person, eating healthy simply means not drinking sugar laden soda, forsaking chips, and limiting all desserts to anything that is fat free. Someone else might take it more seriously and not only stay away from bad foods but actively add good foods to their diet. There is a big difference between not drinking cola and making sure you have 8 glasses of water each day.

Another person might have a salad every day for lunch, but that salad could be covered with regular blue cheese dressing. Her friend might have a chicken breast and a vegetable - which is much healthier in the long run, saving over 500 calories and about 14 grams of fat.

Too many thin individuals are convinced they have no worries until they are felled by chest pains or a stroke because of their cholesterol levels. They truly believe that their weekly binge drinking, nightly desserts, and fast food lunches have no effect as long as they still wear their "skinny jeans".

Learning to eat healthy can be a tough choice, but it's even harder to keep the promise you made to yourself. Following a healthy diet for a week is different than adopting a significant life change. Unfortunately for many, the life change might be the "end of life". - 31843

What makes tandoori chicken so delicious is in the way it is cooked. It is usually cooked at high temperatures in a clay oven called a Tandoor. Tandoori food is often considered the culinary pride of the Indian people, and known as a Punjabi specialty. It is prepared with the greatest of care and the passion for this cooking often translates to amazing food. Heat in a tandoor is generated from lit coals at the base of the oven (which has a similar shape to a pot-belly stove). As the food inside it cooks, its juices drop down onto the hot coals, producing deliciously flavored smoke that is the signature of the tandoor.

Tandoori Chicken is a glorious dish and perfect to serve at any dinner party. It is without question my favorite dish and it is good for you and your weight loss goals as well. When preparing spicy and succulent tandoori chicken you can take pride in knowing you are eating a healthy food that will nourish you and satisfy your stomach too. The main key to juicy tandoori chicken is not to over-grill it. If you are using a tandoor, be sure to keep a close eye on your chicken as it cooks.

Tandoori chicken should be marinated for 24 hours, so you can begin preparation the day before. Mix yogurt and tandoori spices in a large bowl. Stir together 1 cup of yogurt and tandoori masala spices. This spicy marinade will make the tandoori chicken spicy and bursting with flavor. In India you would need a glass of water close by, but in Western places like the United States and Canada a more mild form of the marinade is more commonly applied.

Once your marinade is ready, you will need to rinse and clean your chicken pieces. Fork the chicken pieces as this will help the marinade absorb into the chicken. Place in the plastic bag, and add in the marinade. Ideally, you will want to let the chicken marinade overnight, but letting it sit for 4 hours should produce a delicious taste in your tandoori chicken. The chicken simply gets better if its allowed to marinate overnight. Cover the bowl you use with plastic wrap or aluminum foil before putting in the refrigerator.

After you have successfully made tandoori chicken there is so much you can do with the left overs. You could make a spicy tandoori chicken salad or a healthy and rib sticking soup. Make a delicious sandwich with whole wheat bread or mix the chicken with a whole grain rice. The possibilities are endless, and they are all low in fat!
